A very sweet coffee, with a fruity aroma, elegant acidity and a lot of body. Wonderful in an espresso, great for filters. Complex and easy to drink at the same time.
After the harvest, the whole fruits go to a fermentation tank, without the presence of water, until they reach 39 degrees, in a process that takes from 46 to 52 hours. The coffee is dried in open, greenhouse-like patios.
Catuaí is a Brazilian variety, developed at the end of the 40s by the hands of the IAC (Agronomic Institute of Campinas), the result of crossing the Caturra Amarillo and Mundo Novo varieties. It is a low plant, of high vigor and susceptible to pests. On the other hand, it produces a drink of high sensory quality. In Tupi, the most common language among the native peoples of Brazil, Catuaí means "very good." Catuaí 81 is one of several red Catuaí lineages.
